Bring This Dish To New Years Eve To Start The Year With More Friends

Sweet Potato, Black Bean, Avocado, Mango Bowl

This bowl delivers just what everyone wants after a month full of stuffing, fudge, turkey, and pie–an explosion of taste not involving sugar or butter. It’s quick, incredibly nutrient-rich, and full of the slow-digesting, fiber-rich carbs. Perfect for a New Years Eve party or family get-together, try out this recipe from The Engine 2 Diet.

1 large cooked sweet potato, skin removed, cut into cubes
2 mangoes, peeled, seeded, and cut into cubes
1 red bell pepper, seeded and chopped

1 avocado, peeled and chopped
1 cup chopped cilantro
Juice of 1 lime
Balsamic vinegar to taste

– Warm sweet potatoes in microwave if using chilled leftovers.
– Place generous portion of sweet potatoes into large serving bowl.
– Top with mangoes, bell pepper, black beans, avocado, cilantro and any other plant-strong toppings you desire.
– Drizzle with lime juice and vinegar, stir gently, and serve.

BLOOD SUGAR TIP: Look for a quick uptick in glucose right after consumption from the mangoes. Then manage any potential highs over the next couple of hours due to the slow digesting carbs from the black beans and sweet potatoes. If a pumper, this is the perfect time for a Dual Wave bolus.
